Homemade Graham Crackers

As I have been on the look out for Real Food SNACK recipes, my lovely (real life) friend, Laura, sent me this awesome recipe and I tried it immediately.

This is the ingredient list of Honey Maid Honey Grahams:

UNBLEACHED ENRICHED FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMINE MONONITRATE {VITAMIN B1}, RIBOFLAVIN {VITAMIN B2}, FOLIC ACID), GRAHAM FLOUR (WHOLE GRAIN WHEAT FLOUR), SUGAR, SOYBEAN OIL AND/OR PARTIALLY HYDROGENATED COTTONSEED OIL, HONEY, LEAVENING (BAKING SODA AND/OR CALCIUM PHOSPHATE), SALT, ARTIFICIAL FLAVOR, SOY LECITHIN, CORNSTARCH. CONTAINS: WHEAT, SOY.

Yowza! HONEY, boasted twice in the title, doesn’t come sweeping onto the scene until 5 ingredients deep (in a list of 10) after sugar and partially hydrogenated oils.

Instead, with a total of 5 minutes of hands-on time and 8 minutes in the oven, I had a nice large batch of Homemade Graham Crackers.

I use any crackers like this for the sole purpose of snack supplements (not the snack in its entirity), since they are thicker and heartier than regular graham crackers, a nice snack serving size is just 2-3 (along with some nut butter or veggies/fruit or yogurt, etc.).

Homemade Graham Crackers

Ingredients:

2 cups whole wheat flour

3/4 t. cinnamon

1/2 t. baking powder

1/2 t. baking soda

1/2 cup butter

1/3 – 1/2 cup honey (I tried to cut down the honey because I am always trying to cut out the “sugar,” but when I cut it all the way to 1/3 c. the grahams still tasted fine but were a little more crumbly and less moist).

Directions:

1.) Preheat oven to 400 degrees

2.) Combine dry ingredients and set aside

3.) In seperate bowl, combine melted butter and honey

4.) Stir butter/honey mixture into dry ingredients until combined

5.) Flatten mixture onto cookie sheet (roll out with glass or suitable rolling pin) – flatten to desired thickness.

6.) Bake 8-10 minutes, remove from oven, poke holes (for appearance, if desired) and cut quickly.

Yield: about 25-30 rectangles/10-15 servings

A little Real Food encouragement:

Start slow! We can’t revamp our pantries overnight…

Try this recipe; I bet you’ll love it. Make it a couple times, get used to it and then, only then, move onto a different kid-friendly, snack-time staple.

Do you have any go-to Real Food snack recipes? I’d love to hear!

Love this! If I was eating gluten I would be all over this! One of my friends made grapes wrapped with goat cheese and crushed walnuts. Sounds amazing, right?!

By the way, I wanted to follow up with you about Graham Flour. Here you go: http://en.wikipedia.org/wiki/Graham_flour. I definitely recommend using it the next time you make this recipe! Great job, Mama XO

Love this!! I’ve been a little skeptical at trying to make crackers, but you can’t beat good directions from someone who has actually made them, lol! Would you consider sharing this post on my blog’s link-up? It would be a great addition! http://littlefarminthebigcity.blogspot.com/2012/04/homestead-helps-wednesday-homestead-hop_11.html

How do you think spelt flour would hold up in this recipe? Just bought some, never used it before …

awesome! I am not sure how it would turn out…on the taste or texture?! I have never used it either, but just repinned your tortilla recipe and would love to give it a shot. If you’re a little concerned, I would givtry it using about 1/2 spelt; 1/2 whole wheat just to see how that turns out and then increase/decrease respectively! Let me know how it turns out :)

Will do. It won’t be any time soon though. I hate using the oven when it is so hot out! This heat wave/drought is out of control.

I made these yesterday, but because Myles wanted to make cookies, I flattened half the batter and let him use cookie cutters. I wasn’t sure if it would work or not, but sure enough! Just thought I’d share my discovery.
