Looking for a super easy, super healthy lunch?
Look no further! I know the name isn’t overly appealing, but it sure does get a two-year old excited; who, by the way, asks for and eats this by the bowlful. It is essentially egg salad but the the avocado offers the binding and creamy texture, so you can ditch the mayo (which usually contains the not-so-healthy soybean oil; even in organic mayo, it is just organic soybean oil). Given that I have yet to try a homemade recipe, I’d just as soon do without.
Avocado Egg Smash
Ingredients:
- 2 hard-boiled eggs
- 1 avacado
- pinch of salt and pepper (to taste)
Directions:
Peel your hard-boiled eggs and avocado; smash together and season with salt and pepper to taste!
IT IS THAT EASY.
Personal Note: Serve open-faced on a slice of toasted Ezekiel bread atop a bed of lettuce, wrap in a lettuce leaf, or eat it straight from the bowl! I don’t recommend making this in a large batch because avocados brown quickly and it will lose any aesthetic appeal it still had going for it! Thankfully, it takes only seconds to prepare.

Made it, loved it, told the fam about it. They said they’ll try it. Only downside, Myles didn’t eat it. I made him at least try it and even told him after he spit it out,”But Bubba, Max likes it! Want to try another bite?” No such luck. He’s being a little stinker with food lately. We’ll have to get together so he can watch Max dominate. Thanks for sharing another great recipe!
